At that time caramel was made by crystallizing sugar in boiling water which produced a crunchy hard candy. This type of confection may be similar to sesame candies found throughout Greece, Asia, and Vietnam โ€ฆ without the sesames of course. Although if youโ€™ve ever tried sesame candy one might say itโ€™s somewhat reminiscent of caramel.

Even though the Arabs are the first people on record to make caramel, its origin is still unknown. In the mid-1600s Americans used large copper kettles to make toffee and other types of hard candies.ย  Caramel is referred to as caramel or toffee.
